December 22 – El Gordo, the massive Spanish lottery, is drawn.
Christmas Eve @ midnight the chimes of the local church, calling worshippers to the ‘misa del gallo’ (Mass of the Rooster), so named because it is said that a rooster crowded on the night Jesus was born.
Christmas Day (‘Navidad’)
Christmas day is a time set aside primarily for family reunions. Some children now have a Papa Noel that comes to them then too but the main celebrations in all the towns and homes are on the night of January 5th with the 3 kings.
Spanish Christmas trees often feature wooden & straw ornaments, electric lights & shiny colored balls. But the most important decorative element is the nacimiento, or nativity scene.
New Year’s Eve (‘Noche Vieja’)
The Spanish see in the new year fairly sober either with friends or with family, and then go out to the bars at about 12.30. The partying then continues until about 6am or later
January 6 is the day when you get your presents. Three Kings Day (Epiphany) (‘El Dia de los Reyes’)
The three kings lead their procession through the streets, throwing sweets to the children. The next morning, the children wake up to find their presents have been left overnight
Sangria Recipe
A very simple, basic sangria recipe. This recipe intentionally leaves ample room for improvisation and additions, and should therefore be used as a springboard to create your own unique sangria recipes. The unaltered basic sangria recipe below, however would meet with the approval of strict sangría traditionalists.
Makes 4 glasses Difficulty: Very easy Preparation time: 10 minutes
Ingredients
* 3 1/4 cups ( 26 fl. oz) dry red wine
* 1 tablespoon sugar
* Juice of 1 large orange
* Juice of 1 large lemon
* 1 large orange, sliced thin crosswise
* 1 large lemon, sliced thin crosswise
* 2 medium peaches, peeled, pitted and cut into chunks
* 1 cup (8 fl. oz) club soda
Preparation
Combine all the ingredients except for the club soda in a large punch bowl or serving pitcher, mixing well. Refrigerate overnight. immediately before serving, mix in the club soda for added fizz. Ladle into cups with ice cubes.

Website Translation – How To Get It Right From The Start
Savvy marketers know that giving their customers the option of getting the information they need in the language they prefer always makes sense. Companies that want to grow market share and increase revenue can reach out to online Hispanics with Spanish translations of their websites. Here’s how to get it right from the start.
1. Always provide contact information so that your customers can call, write or email you with their questions and feedback in Spanish. This information should be visible on every page in Spanish.
2. Make sure that the hyperlinks on the Spanish pages lead to other pages in Spanish. Taking your customers to the English part of your site may cause them to abandon the site before they make a purchase.
3. Work with a professional translation company. Bilingual employees may not have the necessary writing skills to re-create your content in Spanish. Language service providers include proofreading as part of their translation services.
4. Remember to have forms, terms of service, and FAQs translated for your Spanish-speaking customers.
5. Include testimonials from Latino clients and employees. Word of mouth carries a lot of weight among Hispanics.
6. If visitors to your site can sign up for periodic emails or a newsletter, show your Latino customers that you also have something for them. If you sell diabetes testing supplies, send new, healthy recipes for Latino food every quarter. If you’re a retailer, email your customers and remind them of your services at key times of the year. These dates will vary depending on your type of store, but Mother’s Day, back-to-school, and Christmas should be on your list.
7. A Spanish translation will usually take up 20% to 25% more space than the original English text. If this extra copy won’t fit in your page layouts, edit the original copy or try using a slightly smaller font.
8. Ask that the translation be delivered in neutral Spanish and your business will benefit from communicating with all Spanish speakers without offending any of them. Neutral Spanish avoids using regional language variations and slang, and is easily understood by all U.S. Hispanics.

I need it for a school project (yeah, weird school) and need a simple recipe for the south american/spanish (christmas?) cookies.

Alfajores
1 – 1 1/4 C AP flour
1/2 C corn starch
1/4 tsp baking powder
1/8 tsp salt
1/4 C sugar
1 stick of butter
1 egg
1/2 tsp vanilla extract
Dulce de leche
Powdered sugar
Cinnamon (optional)
Preheat the oven to 350 degrees F.
Beat the butter and sugar until light and fluffy. In another bowl whisk together the flour (starting with 1 cup), cornstarch, baking powder, and salt and set aside.
Add the egg and vanilla to the butter and beat until smooth. Add the dry ingredients and beat until the dough comes together. Add some of the remaining 1/4 C of flour if the dough is too wet.
Roll out the dough to about 1/8 in thickness and cut into whatever shape you desire. Bake for 12 to 15 minutes or until the edges are light golden brown.
Cool on a rack and fill with a teaspoon or more of dulce de leche
Dust the tops with some powdered sugar (add a tiny bit of cinnamon if preferred).

Dulce de Leche
14 ounces can sweetened condensed milk
Fill the bottom of a double boiler halfway with water. Bring to a boil, then reduce heat to medium for an active simmer. Pour a 14-oz. can of sweetened condensed milk in the top of the double boiler and set it over the simmering water. Don’t cover. Every 45 minutes, check the water level and give the milk a stir. Replentish the simmering water with hot water as needed. When the milk is as thick as pudding and is a rich, dark caramel color, 2 1/2 to 2 hours, remove from heat, cool thoroughly, cover, and refrigerate or use immediately.
