Spanish weddings? what food?
I have to plan a Spanish wedding for my school as a project. I have 3 main dishes 1 with beef, 1 with seafood, and 1 with chicken plus all of the sides with these dishes. I also have to have snacks and sweets. What should i have? I have no clue what to have! If u could include websites with the recipes and pictures… that would be amazing. Thank you so much for helping me!

Bride’s Mole with chicken (Mole de Novia con Pollo) 35 to 40 minutes, start to finish.
6 skinless boneless chicken breast halves
4 cups canned fat-free reduced-sodium chicken broth
8 guajillo dried chilis, toasted (Toasting instructions to follow recipe.)
2 table spoons sesame seeds, toasted
4 prunes cut into small pieces
1/4 cup fresh orange juice (juice of one large orange)
1/4 teaspoon crushed red peppers
1/4 teaspoon ground allspice
2 tablespoons vegetable oil
1/2 medium onion, chopped
2 large cloves garlic, thinly sliced
1 (6 to7-inch) corn tortilla, quartered
1/2 teaspoon dried oregano, crumbled
1/4 cup red wine (may be omitted) replace with 3 tablespoons raisins
1 ounce Mexican chocolate (such as Ibarra or Abuelita)
10 Cut each chicken breast crosswise into 3 pieces and put in a large saucepan. Add the broth, and cook, covered, over medium heat until tender, about 10 minutes. Let the chicken cool in the broth.
2) Meanwhile, toast the chilis; then soak them in hot tap water 25 minutes. Toast the sesame seeds until just golden. Drain the chilis and discard the water. Put the chilis, sesame seeds, prunes, orange juice, crushed pepper, and allspice in a blender. Reserve
3) In a small skillet, heat 1 tablespoon of the oil over medium heat fry the onion, garlic, tortilla, and oregano, stirring, until they start to brown. 3 to 4 minutes.
4) Transfer onion mixture to the blender. Add the wine, or raisins and 1 1/2 cups of the chicken broth from cooking the chicken. Blend as smoothly as possible, then pour through a fine mesh strainer into a large bowl, pressing with a wooden spoon to extract the soft pulp and juice. Discard the debris.
5) In a large saucepan, heat the remaining tablespoon of oil over medium heat until it shimmers. Gently add the chile mixture (to minimize splattering). Cook, stirring, 1 minute. (If the sauce is too thick, add hot chicken broth to reach the desired consistency of pancake batter) Add the chocolate. Reduce the heat to low, cover and simmer, stirring frequently, until the chocolate melts and the flavors blend, about 15 minutes. Add the chicken. Bring to a simmer and cook 3 to 4 minutes. Serve hot.
toasting chiles:
Wear gloves to avoid irritation from the chile oils in the veins and seeds of the chilesl. Do not rub your eyes or nose. To toast dried chiles: Wipe the dried chiles with damp paper towels to remove dust. If dried chiles are washed before roasting, they may be too wet to roast, so allow them to dry completely before roasting.
Cut the chiles open with kitchen scissors or a small sharp knife. Remove and discard the stems, seeds, and veins. Heat a dry skillet or comal over medium heat. Put the chiles in the heated pan and press to flatten with a wide spatula to make contact with the surface of the pan. Toast, turning 2 to 3 times, until aromatic and chiles take on some orange color. Do not let the chiles get any black spots, which indicates it is burned, or they will be bitter.
Notes: Mexican Chocolate has some cinnamon and sugar added to it, so if you use bakers chocolate, add 1 teaspoon sugar and 1/2 teaspoon cinnamon to the dish.
If you can’t find Guajillo chiles, substitute dried California chiles, or in a pinch, New Mexico chiles, but they will be hotter.
Mole can be cooke as much as 4 days in advance, and stored in the refrigerator in a covered container. (It is actually better after sitting at least one day.) Just reheat, with cooked chicken pieces in pot.
